Fermentation — an ancient technique in a modern cream

Saccharomyces Ferment Filtrate

Obtained from baker's yeast (Saccharomyces cerevisiae). Rich in beta-glucans, amino acids and vitamins. Used by brands such as Missha (the Time Revolution line). Its mechanism of action is similar to GFF — supporting the skin barrier and hydration.

Bifida Ferment Lysate

A lysate of Bifidus bacteria — the same ones we know from probiotic yogurts. In cosmetics it has been used since the 1990s by Estée Lauder (Advanced Night Repair). It is one of the best-studied fermented ingredients in cosmetics, with evidence of protective effects against oxidative stress and UV.

What does fermentation actually do to an ingredient?

This is the key question that marketing rarely explains precisely. Fermentation introduces several important changes:

  1. Breaking large molecules into smaller ones — proteins are broken down into peptides and amino acids, polysaccharides into oligosaccharides. In theory, smaller molecules penetrate the skin more easily.
  2. Creating new bioactive compounds — the metabolism of microorganisms produces organic acids, enzymes, vitamins and antioxidants that were not present in the original substrate.
  3. Lowering the pH — fermentation naturally acidifies the product, which can be beneficial for the skin (the optimal skin pH is 4.5–5.5).
  4. Eliminating irritants — fermentation can break down potential allergens and irritants present in a plant-derived raw material.

The state of the scientific evidence — what do we know for sure?

Fermented ingredients have a relatively good scientific basis by the standards of the cosmetics industry, but it's important to keep things in proportion:

  • Bifida Ferment Lysate — the best studied. Research (including independent studies) confirms protective and regenerating effects. Level of evidence: moderate to high.
  • Galactomyces Ferment Filtrate — several clinical studies sponsored by P&G (the owner of SK-II) point to improved skin luminosity and reduced hyperpigmentation. Level of evidence: moderate, but burdened by a conflict of interest.
  • Saccharomyces — a smaller body of evidence. In vitro studies confirm antioxidant activity, but clinical data are scarce.

In general: fermented ingredients are not miracle elixirs, but they have a more solid scientific foundation than many trendy "superfoods" in cosmetics.

Is fermented = better than non-fermented?

This is a question to which the K-beauty industry responds with an enthusiastic "yes!", but science is more cautious. The key caveats:

  • Not every fermentation improves a raw material — the effect depends on the microbial strain, the substrate, and the conditions and duration of fermentation. The same apple fermented with different strains will give entirely different results.
  • Direct comparisons are rare — there is a lack of studies comparing the same ingredient in fermented and non-fermented versions on the same group.
  • The marketing effect — the word "fermented" sounds scientific and natural at the same time, which makes it an ideal marketing tool, regardless of the actual added value.

Potential problems — who might fermented ingredients not work for?

  • Skin prone to seborrheic fungal issues — products rich in yeast (Saccharomyces, Galactomyces) may, in theory, worsen fungal conditions. This is a popular theory in the "fungal acne" community, although direct evidence is limited.
  • Histamine sensitivity — fermentation can increase histamine content, which in people with histamine intolerance may trigger redness.
  • Yeast allergies — people with a confirmed yeast allergy should exercise caution.

How to choose wisely?

If you want to add fermented ingredients to your skincare routine:

  1. Start with Bifida Ferment Lysate — the best studied, well tolerated, and available across many price ranges.
